{Tasty Tuesday:Chicken Puffs}

Best things ever.


Ingredients
- 2 Chicken breasts
- 3-5 Chopped onion
- TBSP minced garlic
- 6 oz cream cheese
- 1 c butter
- Panko bread crumbs
- 1 package pillsbury crescents


Boil chicken with chopped onion & minced garlic.
Shred chicken and mix with the cream cheese & 3/4 c butter
Mix well
Open crescent rolls and add a large dollop in the middle of each & fold and place on baking sheet
Roll into remaining butter and add panko crumbs.
Bake @ 375F for 10-12mins
Serve over rice AND make this sauce..so bad but so good.
I kinda eye ball it.. I mix some cream of chicken soup with sour cream.

Tasty Tuesday; Easy Sugar Cookies

..I decided to bake sugar cookies. Honestly, the only cookies that ever come out for me are the pre-packaged kind..but these tasted pretty good. They were nothing to write home about, but they were edible which is always an accomplishment for me.

Ingredients

  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 1 1/2 cups white sugar
  • 1 egg
  • 1 teaspoon vanilla extract

Directions

  1. Preheat oven to 375 degrees F (190 degrees C). In a small bowl, stir together flour, baking soda, and baking powder. Set aside.
  2. In a large bowl, cream together the butter and sugar until smooth. Beat in egg and vanilla. Gradually blend in the dry ingredients. Roll rounded teaspoonfuls of dough into balls, and place onto ungreased cookie sheets (I greased mine).
  3. Bake 8 to 10 minutes in the preheated oven, or until golden. Let stand on cookie sheet two minutes before removing to cool on wire racks.

Tasty Tuesday; Potatoes Au Gratin

Yes.. another potato recipe. If you like "funeral potatoes" you will love these.
I may, or may not.. make a huge batch on Sundays and eat it throughout the week.
This was in my Mother-in-law, Sheila's recipe book made by my sister-in-law Kristin..who got it from her Aunt Barbara..get it?

Ingredients
5 TBSP margarine
6 TBSP chopped onions
7 TBSP flour
2 tsp salt
dash of pepper
3 c of milk
8 large potatoes (boiled with skins on)
4 c grated cheese

Melt butter in saucepan. Add onion and cook slowly for 5 minutes. Blend in flour; remove from heat. Add salt and pepper and stir in milk. Cook slowly, stirring until thick. Add cheese, reserving some cheese for the topping. Stir until the cheese is melted. Grease a baking dish. Peel potatoes and slice. Layer potatoes (I usually do 2 layers) and sauce. Top with grated cheese. Bake at 350 degrees for 20 minutes or until bubbly.

Tasty Tuesday; Cheesy Chicken

I experimented with the crockpot tonight...Kind of a scary thing. I didn't get a picture of the finished product (I forgot) but here's the recipe anyways. I honestly wasn't a huge fan, but that didn't stop me from eating it.. maybe too much cream. However the hubs said he liked it.

So here's the recipe if you want to give it a try.
Or if you have suggestions for other chicken crockpot recipes let me know :)

Cheesy Chicken
Chicken (I had some tenders, but breasts would work too)
1 can cream of chicken
1/4 c sour cream
1/4 to 1 c cheese of your choice
pepper
salt

Cook on high for 2-3 hours or until chicken is fully cooked.
SIDE NOTE: I would recommend cooking on low for a longer period of time but I just didn't have the time.
Serve over pasta or rice. TA-DA!

Tasty Tuesday; Cheesy Potato Rounds

Like many of us I am completely addicted to Pinterest.
My problem is I have tons of pins but haven't attempted any of the 'pins'.
Yesterday.. for the first time.. I did.

Cheesy Potato Rounds
2-4 large potatoes
About 1/4 cup butter
Bacon (optional)
Cheese (optional)
Green onions (optional)

Super easy..
Preheat oven to 400 degrees
Wash & clean potatoes.. cut into slices (thin or thick)
Melt butter in the microwave and coat each side of the potato
Cook for about 30-40mins
Remove potatoes
Add fixings
Return to oven for 3-5mins
Dab a side of sour cream on your plate
Enjoy!

I think this would be an easy side for a potluck (and cheap).
